Amount Measure Ingredient -- Preparation Method

5 cups all-purpose flour
3 3/4 cups granulated sugar
2 tablespoons baking powder
2 teaspoons salt
1 1/2 cups butter or margarine -- plus
2 tablespoons butter or margarine -- softened

Spoon flour into measuring cup and level with spatula. Put in large bowl
with at least 4 quart capacity. Measure sugar, baking powder and salt into
flour. Stir until thoroughly blended. Add butter and use pastry blender or
clean hands to work into dry ingredients until mixture resembles coarse meal.
Store covered in airtight container in refrigerator or freezer. Use mix at
room temperature and do not press down when storing or measuring. Makes 10
cups.

Chocolate Brownies (1001 Cookie Mix)

2 cups semisweet chocolate chips
2 cups 1001 Cookie Mix -- (see recipe)
2 eggs
1 teaspoon vanilla extract
1 cup chopped nuts

Melt 1 cup chocolate chips in small heavy saucepan over low heat. When
pieces begin to melt, remove from heat; stir. Return to heat for a few
seconds at a time, stirring until smooth. Let cool 5 minutes. Combine in
large bowl, melted chocolate, Cookie Mix, eggs and vanilla. Beat until well
blended. Stir in 1/2 cup nuts. Spread evenly into greased 8" or 9" square
baking pan. Bake at 350 F. for about 20 minutes. Do not overbake. Cool
slightly. Meanwhile, in saucepan, melt remaining chocolate. Cool 5 minutes.
Spread over baked brownies. Press remaining nuts into top. Cut into
squares. Makes 16 brownies.

1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1/2 cup chopped nuts

Mix together in large bowl, cookie mix, brown sugar, egg and vanilla. Stir
in chocolate chips and nuts. Drop dough by slightly rounded teaspoonfuls
onto greased cookie sheet 2" apart. Bake at 375 F. for 12 to 15 minutes
until lightly browned. Cool on wire rack. Makes about 36 cookies.

4 cups 1001 Cookie Mix -- (see recipe)
1 1/2 teaspoons vanilla extract
1 egg
3 tablespoons unsweetened cocoa powder

Mix together in large bowl all ingredients except cocoa. Divide dough in
half. Add cocoa to 1/2 of the dough. Cover and chill doughs separately.
Roll dough separately on floured surface into 2 rectangles about 1/4" thick.
Top one with the other and press together with a rolling pin. Roll up
lengthwise, jelly roll fashion. Chill until firm. Cut rolls into 1/8"
slices and bake at 375 F on greased cookie sheet for about 6 minutes. Cool
on wire rack. Makes about 48 cookies.

1/3 cup packed dark brown sugar

3 cups rolled oats
1 cup raisins
---CINNAMON SUGAR---
1/2 cup granulated sugar
1/2 teaspoon cinnamon

Mix together in large bowl Cookie Mix, butter, brown sugar, egg, vanilla and
cinnamon. Stir in oats and raisins. Drop dough by slightly rounded
teaspoonfuls onto greased cookie sheet 2" apart. Sprinkle with cinnamon
sugar. Bake at 375 F about 10 to 12 minutes. Do not brown. Let cool 2
minutes and remove to rack to cool. Makes 36 cookies.

CINNAMON SUGAR: In a small bowl, combine sugar and cinnamon; blend well.

Mix together in large bowl Cookie Mix, orange peel, cinnamon and egg. Stir
in cranberries and nuts. Shape into 1" balls and roll in granulated sugar to
coat lightly. Place 3" apart on greased cookie sheet. Bake at 375 F about
12 minutes or until lightly browned around edges. Remove at once to wire
racks to cool. Makes about 48 cookies.

1 tablespoon ground ginger
1 teaspoon cinnamon
1 egg
1/4 cup dark molasses
Granulated sugar

Mix together in large bowl all ingredients except sugar. Drop dough by
slightly rounded teaspoonfuls into small bowl of sugar. Roll to coat
lightly. Place 2" apart on greased cookie sheet. Bake at 350 F. about 12 to
15 minutes. Do not brown. Let cool 2 minutes and remove to rack to cool.
Makes 48 cookies.

GINGERBREAD MEN: Prepare Gingery Snap dough. Divide in half. Cover and
chill 1 hour or until dough is easy to handle. Roll dough, half at a time on
floured surface to 1/8" thickness. Cut into Gingerbread men using cookie
cutters. Arange cutouts, 1" apart, on a greased cookie sheet. Sprinkle with
sugar. Bake at 375 F. for 8 to 10 minutes. Do not brown. Cool on wire
rack. Makes about 48 cookies.

Holiday Coconut Squares (1001 Cookie Mix)

1 cup coconut
3/4 cup chopped pecans -- OR
chopped walnuts
1/2 cup chopped candied cherries
Granulated sugar

Mix together in large bowl Cookie Mix, eggs and lemon rind. Stir in coconut,
pecans and cherries. Spread in well-greased 13" x 9" pan. Bake at 350 F for
20 to 25 minutes. When done, center should spring back when pressed lightly.
While warm, cut into 1 1/2" squares. Sprinkle with sugar. Makes 48 squares.

1/2 cup ground almonds
2 eggs
1 cup granulated sugar
2 tablespoons all-purpose flour
1 tablespoon orange juice
1 teaspoon grated orange peel
Confectioner's sugar

Make Crust: Mix together in bowl, Cookie Mix and almonds. Press into
lightly greased 8" square baking pan. Bake at 350 F for 15 minutes. Do not
brown.

Make Filling: Mix together in bowl, eggs, granulated sugar, flour, orange
juice and orange peel. Spread evenly over crust. Bake 25 minutes longer or
until top is set. Cool on wire rack in pan. Cut into squares while still
warm. Sprinkle with confectioner's sugar. Makes 16 squares.

3/4 cup peanut butter
1 egg

Mix together in large bowl all ingredients. Shape dough into 1" balls.
Place 2" apart on greased cookie sheet. Flatten in criss-cross pattern with
fork dipped in flour. Bake at 375 F. for about 10 minutes or until edges are
light brown. Cool slightly; remove from cookie sheet and cool on wire rack.
Makes about 48 cookies.

PEANUT BUTTER STARS: Roll balls in sugar. Place about 2" apart on greased
cookie sheet; do not flatten. Bake until edges are light brown, about 10
minutes. Immediately press 1 milk chocolate star firmly in each cookie.
Cool slightly; remove from cookie sheet and cool on wire rack. Makes about
48 cookies.

PEANUT BUTTER AND JELLY COOKIES: Shape dough into 1" balls. Place about 2"
apart on greased cookie sheet. Bake about 10 minutes. Remove from oven and
flatten with a spatula. Cool slightly before removing from cookie sheet;
cool completely on wire rack. Put cookies together in pairs with jelly.
Makes 24 sandwich cookies.
